Cheesecake

(EVERYTHING MUST BE ROOM TEMP)

  • 32oz of cream cheese (low speed mix until smooth)
  • 1 cup sugar (low speed mix until creamy)
  • 1/3 cup of creme fraiche + 1/3 cup of greek yogurt (stir in)
  • 1 1/2 teaspoon vanilla extract (stir in)
  • 1/8 teaspoon salt (stir in)
  • 4 large eggs (beat in a separate bowl before stirring in)

Crust

Melt 7 tbsp butter, crush 2 cups vanilla wafers, mix with fork, press into 9″ spring form pan

  • 2 cups vanilla wafers
  • 7 tablespoons butter

Oven to 325

Bake 75 minutes

Cool 10 mins. separate

Cool 2 hours put in fridge

Cool 6 hours serve with strawberries
